A new Brookside restaurant introduces Scandinavian food to Tulsa.
Okla.'s TULSA — Tulsans are accustomed to eating cuisine from throughout the world, but one neighbourhood restaurant is now presenting them to a distinctive gastronomic experience.
For those seeking something fresh, Freya, a brand-new Scandinavian restaurant concept, is now open on Brookside.
According to Justin Thompson, chef and proprietor of Freya, "Freya is truly the Nordic goddess of love; she is just an overall beautiful, strongly, feminine figure."
The first Nordic restaurant in town is called Freya. It is Thompson's most recent design in Tulsa.
The idea for the project came from the desire to "explore new things, do new things, and introduce others to new stuff," according to Thompson. "We don't want to keep doing the same things,"
The cuisine introduces Nordic delicacies to people with experimental palates, from its cucumber avocado salad to its Scandinavian meatballs to its specialty elk chops with a herbed goat cheese sauce. According to Thompson, what sets them apart is their menu of alcoholic and nonalcoholic beverages.
The beverage programme at Freya features a whole selection of non-alcoholic beverages. A variety of wines, beers, and mocktails are included.
Every aspect of the dining experience, from the kitchen to the menu, is created with Nordic hospitality in mind.
"We use the term hygge, which denotes a cosy and friendly atmosphere. It's a Danish word, and that's how I feel right now "Thompson explains. "It's a cosy spot to eat, unwind, and catch up with friends and family, which is kind of how I believe restaurants and cuisine in general should be.
On its website, Freya is presently taking bookings for its restricted supper service. Starting on August 2, the restaurant will operate during its usual hours and serve brunch and lunch.
